There are two common types of cinnamon, Ceylon cinnamon and Cassia cinnamon.
- Ceylon cinnamon comes from the Cinnamomum verum tree. Ceylon cinnamon has a higher quality than Cassia cinnamon. Ceylon cinnamon has a stronger aroma and a sweeter flavor.
- Cassia cinnamon comes from the Cinnamomum cassia tree. Cassia cinnamon has a lower quality than Ceylon cinnamon. Cassia cinnamon has a weaker aroma and a spicier flavor.
